The three height options exists to provide knee clearance options for the table or placement of your chair — a chair seat needs to sit roughly 10–12" below the tabletop for comfortable arm and leg position, regardless of which height category you're in. That gap is what stays constant across all three heights: dining (28–30" table minus 17–19" seat equates to about 11–12" clearance), counter (34–36" minus 24–26" equates to about 9–10" clearance), and bar (40–42" minus 28–30" equates to about 12" clearance). This is also why you can't just add a taller chair to an existing table and expect it to work. The whole pairing is engineered as a system, not independent choices.
